Hummus is a nutrient-dense spread made mainly from chickpeas (also known as garbanzo beans), tahini, olive oil, and lemon juice. You can then add spices and herbs as desired to create a creamy dip for tortilla chips or warm fresh pita bread, or even as a base for one of my very favorite meals. hummus bowls (recipes and variations coming soon!)
If you don’t have chickpeas on hand, you can also make this with red lentils. It makes a great alternative.

- If using dried chickpeas, start by rinsing them and either placing them in a slow cooker with 2 quarts of water, putting it on low for 6 hours overnight, or placing them in a large pot with 2 quarts of water to do an overnight soak. In the morning, you would then need to cook them for about 1.5-2 hours until nice and soft
- Place about half the chickpeas, tahini, olive oil, lemon juice, and herbs into a food processor and blend until nice and smooth, adding in the ice water a little bit as needed. Continue until everything has been blended. If you have a smaller food processor or if doing it in the blender, you may need to do even smaller batches.
- Time to serve! Great as a dip or base for other toppings such as olives, feta cheese, and pickled onions. You can adjust the flavor by adding hot sauce, balsamic vinegar, different spice mixes, and more.
