Our Sunday morning breakfasts alternate between pancakes and this chewy, sweet cobbler. It is a delicious breakfast, especially when paired with vanilla yogurt or ice cream. You can pretty much use whatever fruit you want, which makes it easy to adjust based on your family’s needs.

Start by preheating the oven to 375.

Next, put the fruit of your choice into a deep skillet with the sugar. Cook for about 10 to 15 minutes on medium high heat, stirring often to keep from burning. If needed, add a little bit of water to keep from burning.

While the fruit is cooking, mix together the flour, 1 cup sugar and the baking powder together in a mixing bowl. Add the milk and whisk to make a smooth batter.

Once the fruit is done cooking, layer it in the bottom of a greased 9×13 baking dish. Gently pour the batter over the fruit. Use a spoon to spread the batter over the fruit, but don’t mix it.

Bake for about 1 hour, then serve topped with vanilla ice cream or yogurt.
