Black Bean Chili

A family favorite recipe. This black bean chili is amazing, especially when eaten in taco form. We like to take the chili and put it on tortillas with sour cream or mayo, and top with extra veggies and hot sauce. Or eat in a bowl with shredded cheese, sour cream. and crushed tortilla chips. Whatever way you eat it, you are sure to enjoy it!

Black Bean Chili

Cook Time 25 minutes

Ingredients
  

  • 2 large cucumbers, peeled and diced
  • 2 medium onions, diced
  • 3 cups fresh diced tomatoes OR 1 (28oz) canned diced tomatoes, drained
  • 2 tsp cumin
  • 4 16oz cans of black beans (do not drain)
  • zest and juice of 1 lemon
  • a bunch of cilantro, chopped
  • tortillas, sour cream, mayo, or plain Greek yogurt, chopped lettuce, diced tomatoes, and shredded cheese for serving.

Method
 

  1. Start by adding some oil to a large pot on medium heat. Cook the onion and cucumber for about 5-7 minutes or until soft.
  2. Add tomatoes, and cook another 5 minutes.
  3. Add black beans and cumin, and cook about 10 minutes
  4. Add in lemon zest and juice and chopped cilantro, stir, and let it cook another minute or so. Remove from heat.
  5. Build your chili tacos! Layer mayo, sour cream. or plain yogurt onto a warmed tortilla. Use a slotted spoon to scoop the chili, drain it, and place it on the tortilla. Top with fresh lettuce, tomato, cheese, and hot sauce and enjoy!
