Black Bean Chili

This is one of our very favorite recipes in the Bailey household. We like to eat this taco style, however you could easily just eat it like a regular bowl of chili. You could serve it with chicken, but it is honestly just as good the way it is with just the chili and vegetables!

  1. 1.

    Start by placing the diced onion and cucumber in a pot with a little bit of oil. Cook for 10 minutes or until the vegetables are nice and soft.

    Once the vegetables are nice and soft, add the tomatoes and black beans (with the liquid) into the pot, along with the cumin, and cook for about 20 minutes on medium heat, letting it simmer gently. 

  1. 3.

    Remove the chili from the heat, and add lemon juice and chopped cilantro. 

     

  1. To serve this taco style as we do, simply spread mayo or plain Greek yogurt on a warmed tortilla and use a slotted spoon to place the chili on the tortilla. Then just top with the veggies such as lettuce and tomato, and of course lots of Tabasco if you want to eat it the Bailey way. 

    You can eat this as a regular chili topped with whatever toppings you want as well. Enjoy!
